A couple of hours on the trails and ski tracks of Levi, or a hike to the fells takes a lot of energy. And that energy should preferably be available in a delicious and easy-to-enjoy form.

Here are our tips. A little better, with little effort. Try and enjoy.

1 – Quick and Easy Reindeer Soup on Open Fire

You will need:

  • Water

  • Bag of organic potatoes and root vegetables

  • Allspice

  • Salt

  • Bay leaves

  • Cold-smoked or sauteed reindeer

  • Cheese spread (to taste)

  • Lingonberries and parsley for garnish

Bring the water to boil and add allspice, salt, and a few bay leaves. Add the bag of potatoes and root vegetables. Leave the vegetables to boil until they are cooked. While the vegetables are boiling, mix the cheese spread with lingonberries and parsley into a smooth paste. Add the reindeer meat into the pot toward the end of the boil, and leave it to simmer for a bit. Serve on a soup plates with cheese, lingonberry, and parsley spread on top, garnished with lingonberries and parsley.

2 – Hot Campfire Sandwich Deluxe

You will need:

  • Your choice of light sourdough bread or traditional flatbread from Lapland

  • Butter and/or pesto

  • Brie or another soft cheese, such as Koskenlaskija

  • Salamia, from reindeer for example

  • Air-cured ham or other dried meat

Many things are great served between two slices of bread, and even better when prepared over an open fire. You can adjust the toppings for your campfire sandwiches depending on the available ingredients and personal preferences – the only limit is your imagination. Don't be afraid to experiment or try different variations based on the same ingredients, for example. Heat the sandwiches over a campfire or in front of the fireplace for a moment. Guaranteed to taste great!

3 – Simmered Bread Cheese

You will need:

  • Butter

  • Double cream

  • One half of a bread cheese

  • Fresh cloudberries or cloudberry jam

Melt some butter in a cast iron pan. Once the butter has melted, cut the bread cheese into four pieces, and add it to the pan. Pour a decent splash of double cream on top. Cook until the cream begins to boil. Reduce the temperature and leave the bread cheese to simmer and soften for approximately 5 minutes, turning the pieces over occasionally. Serve with fresh cloudberries or cloudberry jam.
